Spaghetti | squash

Greetings! So I’m literally obsessed with spaghetti & all things Italian. L O V E! But we all know that carbohydrates turn into sugar which leads to excess fat; So, I had to think of a way to satisfy my heavy Italian pasta cravings without the heavy carbs! Here it is:


Yields 4 Servings

You will need:

  • 1 Spaghetti Squash
  • 10 oz. Organic Italian Herb Pasta Sauce
  • 8 oz. fresh spinach, chopped
  • 8 oz. lean ground turkey
  • 4 oz. white onion, chopped
  • 4 oz. tomato, chopped
  • 2 oz. pepper jack cheese, shredded
  • 2 tbsp. avocado oil
  • 2 tbsp. Cajun seasoning
  • 2 tbsp. garlic powder
  • 1 tbsp. lemon pepper
  • 1 tbsp. apple cider vinegar
  • 1 tsp. olive oil
  • 1 garlic clove, minced
  • 1 tsp. red pepper flakes


Directions:

  1. Squash Part I
  • cut tail of squash
  • cut in half length-wise FullSizeRender-4
  • spray with 1 tbsp. avocado oil
  • season with 1 tbsp. Cajun seasoning, 1 tbsp. garlic powder, & 1 tbsp. lemon pepper
  • bake, face down, on 375 degrees Fahrenheit for 35 minutes

2. Sauce

  • brown ground turkey in medium sized pan on medium heat
  • add onions, green peppers, tomatoes
  • spray vegetables with 1 tbsp avocado oil
  • sauté on side of pan for 4-5 minutes on medium heat, once turkey is browned
  • add pasta sauce
  • stir & simmer for 15 minutes on medium heat
  • remove from heat

3. Squash Part II

  • remove squash from oven (you should be able to stick it with a fork, easily) FullSizeRender-10
  • with a fork, pull the spaghetti apart
  • add olive oil to pan
  • add garlic to pan; sauté on low-medium heat for 3 minutes
  • add spinach & squash
  • add ACV
  • sauté, stirring every 2 minutes, for 10 minutes
  • remove from heat

4. Layers

  • the 2 squash halves should be close to empty
  • begin layering:
    • thin layer of sauce
    • squash/spinach
    • cheese
    • repeat until you have reached the top of the squash
    • top with red pepper
  • BROIL on LOW in oven, for 10-12 minutes
  • Serve immediately
